The Taste of Normandy at Shiloh Manor Farm features the authentic cuisine of northwestern France. Our menu begins with your choice of Coquilles Saint-Jacques Gratinée, fresh scallops baked in a white wine cream sauce and covered in a dusting of breadcrumbs and Gruyère cheese golden brown and caramelized to perfection, or Roulés Jambon-Fromage, a thin buttery pastry rolled and baked with ham and Gruyère cheese, both paired with a fine Chablis from J. Moreau & Fils.
The entrée is your choice of Sole à la Normande, a baked filet of sole, garnished with mussels, oysters, mushrooms and shrimp served with sauteed potatoes and just harvested soring vegetables, or Joue de Bœuf. Cooked with apples, cider, carrots, pearl onions and a slew of spices and seasonings, the preparation is lengthy, spanning two days of production, producing a melt-in -your mouth beef that is a signature dish of Normandy. As a vegetarian entrée we are offering Tart au Maroilles, a delicious cheese tart served with sauteed mushrooms and spring vegetables. The entrée is paired with an imported Normand cidre from Etienne DuPont, or Chablis, or a rich well-oaked Bordeaux from Saint-Estéphe.
The cheese course features three imported Normand classics: the familiar Camembert, together with Pont l’Eveque and Livarot, all made from fresh cow milk. The cheese course is paired with a Bordeaux. For dessert we are offering a choice of the traditional Normand dessert Teurgoule, a sweet rice pudding baked for several hours, producing a thick caramelized crust on top, a bit like Crème Brulée, or Tarte Normande, Normandy’s signature apple pie, served with homemade Calvados ice cream, coffee and tea.
